COLOMBIAN PANDEBONO

Today I will be teaching how to make a Colombian Pandebono.

What is a Colombian Pandebono?
Well it is a cheesy bread that is baked to have a slightly crunchy outside and a soft cheesy inside.

Lets get started.

Ingredients:
2 cups of Cassava Flour

2 Tablespoons of Cooked Corn Meal

1 Teaspoon of Baking Powder

2 Tablespoons of Sugar

1 Tablespoon of Salt

2 Cups of grated Queso Fresco

1/2 Cup of Feta Cheese

3 Tablespoons of Softened Butter

1 Large Egg

Milk as Needed




  1.  Preheat oven to 425 degrees Fahrenheit. 
  2.  In a large bowl or food mixer, mix Cassava Flour, Corn Meal,  Baking Powder, Sugar and Salt.
  3. Add grated quest fresco and feta. (I normally find buying the cheese in a whole block is   cheaper. Use your hands to shred it instead of a grater. Its much easier)
  4. Add butter and egg to the mix.
  5. Slowly add milk to the mix until it starts to clump together. Eventually it will turn into a soft dough. Be careful not to add too much milk. You can always add more but you can't take it out once its poured!
  6. The dough will be easy to mold, almost like Play-Doh! Split the dough into balls a little larger than a golf ball. 
  7. Place on a baking sheet and place in the oven for 20 to 25 minutes. DO NOT OPEN THE OVEN UNTIL TIME IS UP. DOING SO WILL CAUSE THE PANDEBONOS TO FLATTEN
The edges should look golden brown. Once they are done lay them out to cool. Serve with hot chocolate or coffee!
